Bread Ideas

The weather here is cold & rainy.  A perfect night for some comfort food.  Here are a couple of bread recipes I have made before to help complement your dinner.  I am making the cornbread for a Halloween party this weekend, but have made it  a dozen times before.  And, who doesn’t like some garlic bread?? Simply Recipes gives you 2 variations.

We used to order Greek Salads from a local pizza place because I loved their feta.  I am not a huge cheese fan, but I liked theirs because it wasn’t all thick and clumped.  It was like snow…nice and light.  When I buy feta in the store for my husband, I just grab a container and throw it in my cart.  That is, until the other day.  I spent a little bit of time actually looking at all of the cheese options & I found it in block form. Admittedly, It was a lightbulb moment for me.   Now I can grate my own to make it all snowy!  Der, right?

Poached Chicken Recipe | Simply Recipes

I’ve poached chicken before, but I have never wrapped it in plastic wrap before submerging.  Interesting!  Click the pic to be taken to the info at Simply Recipes.  Other readers suggested wrapping it in parchment paper before wrapping it in the plastic. 

Have you tried this method before?  It is supposed to preserve the juices.  You can add spices also.

Cauliflower with Pine Nuts and Bacon

Cauliflower with Pine Nuts and Bacon Recipe

Ingredients
  • 1 cauliflower head, cut into florets
  • 1/4 cup pine nuts
  • 1/4 pound bacon or pancetta, cut into batons
  • 4-5 garlic cloves, sliced thin
  • 1-2 teaspoons dried oregano
  • 1-2 teaspoons red pepper flakes
  • Salt and black pepper to taste
  • Lemon juice to taste

Method

1 Bring a large pot of salted water to a boil and cook the cauliflower for 5 minutes. Drain and set aside.

2 While the water is heating, toast the pine nuts in a dry sauté pan until lightly browned. Keep an eye on them, as pine nuts go from toasted to burnt quickly. Set the pine nuts aside when they are toasted.

3 Add the bacon to the pan and fry gently over medium heat until crispy. Remove the bacon and set aside with the pine nuts. Sauté the garlic for 1 minute on medium-high heat, then add the cauliflower, pine nuts, bacon, oregano and red pepper flakes. Toss to combine and sauté for 3-4 minutes, stirring often. Do not let the garlic burn.

4 Turn off the heat and add salt and lemon juice to taste.

Serves 4-6 as a side dish
