I’ve had my share of these Cheese Pennies, but these might be different than other Cheese Pennies you may have tried. My brother-in-law works for a landmark restaurant in Boston, and these babies came from there. When he makes them, the hubs literally stands over the platter and eats them until he feels sick. Always.

You start with raisin bread, cut into squares. Mix 2 parts shredded parmesan cheese with 1 part mayo, spread on bread. Then, thinly slice a red onion, and throw a couple of pieces on top, pop in 375° oven. Bake for approximately 10 minutes, or until golden brown. Serve warm.
